A fragrant and spicy rich sauce made vegan with creamy coconut milk and lots of umami flavour. An easy and warm meal in under 30 minutes with lots of butter bean (aka jumbo lima beans) protein that can be eaten straight out of the pan with crusty bread or pita. Can be made with mostly pantry options and fresh or frozen spinach.
Recipe is gluten free but demonstrated as served with pita. Can be served gluten free over polenta.
