Vegan cinnamon swirl coffee cake boosted with earthy sweet potato. The soft, tender sweet potato cake is swirled with a gooey cinnamon sugar vein and topped with crunchy brown sugar streusel. Plenty of mashed sweet potato gives this cake a delicate, pillowy crumb. The rich, earthy, fall flavours of sweet potato, cinnamon, and cloves are perfect with a cup of hot beverage of choice or as a fun party twist. An easy, anytime cake that takes less than an hour.
