Pan fried tofu and Chinese eggplant in a sweet and savoury ginger sauce made with maple syrup and miso that is perfect over rice. An easy vegan meal to replace the take out. The heat of lots of fresh ginger is the main flavour, supported by garlic, soy (or tamari), and miso all rounded out into a sticky sauce with maple syrup. The flavourful sauce coats the lightly coated tofu and fresh eggplant for a complete meal when served with rice. Easy to make in just over 30 minutes for an anytime meal.
