An easy herby and tangy pesto pasta salad (vegan option) with chickpeas, zucchini, and marinated vegetables. The dressing uses your favourite pesto lightened with lemon and oil to evenly coat all the pasta and vegetables for a pasta salad that lasts longer on hot days. Blistered zucchini adds some fresh vegetables to this pantry pasta salad that is great as a side dish or very light main. Great for linking to any pesto recipe on your site.
