A dense, vegetarian salad with protein rich beans, feta, and lots of crunchy vegetables. Perfect for grain-free meal prep or as a satisfying side salad for a potluck or BBQ. The tangy vinaigrette dressing melds with the crunchy vegetables and salty feta and olives and is even better the next day.
