Tangy raspberry variation on vegan lemon curd bars. Sweet and tart raspberry lemon curd set with cornstarch on a sweet shortbread base. The smooth curd has a big burst of fruit flavour. The barely sweet shortcrust base balances the thick layer of raspberry curd. Stunning natural colour from fresh or frozen raspberries for a jewelled treat.

Main ingredients: AP flour, coconut oil, powdered sugar, baking powder, raspberries, lemon juice, cornstarch, coconut milk
