From scratch coconut pineapple poke cake with a condensed coconut milk soak and stabilized whipped cream. A beautifully soft but sturdy cake with crushed pineapple is poked full of holes and soaked in a homemade coconut sweetened condensed milk (alternative listed) mixed with extra pineapple. All topped with stabilized whipped cream and toasted coconut for a from-scratch version of the popular cake. Not overly sweet and a perfect balance of cake and cream full of pineapple and coconut flavour.
