A hearty and filling salad with roasted cauliflower, barley, and kale that can be eaten warm or cold and is topped with a tangy carrot ginger dressing. Chewy barley and nutrient rich cruciferous vegetables create a main dish salad that is great for meal prep. The dressing with roasted carrots and fresh ginger brings tang and earthy sweetness to any salad but pair perfectly with heavier grains and roasted vegetables.
