A different take on stuffed baked potatoes using sweet potatoes filled with spicy pinto beans and peppers. Nutrient rich sweet potatoes are baked to softness and loaded with saucy and spicy cooked beans and bell peppers. Garnish with vegan avocado crema (recipe not included) or sour cream to cut the spice. A simple, filling meal that can be made in advance. All the flavours of spicy bean tacos or burritos in a potato form. Cook the beans while the potatoes are baking for a meal that comes together in under an hour.
