This incredibly soft cake has a light earthy flavour from the butternut and walnuts and is topped with sweet streusel and maple drizzle. A less intense pumpkin, the butternut puree provides a lot of soft structure to the cake which is similar to a less busy carrot cake. Sweetened partially with maple syrup, the lightly sweet cake is balanced by the sweeter streusel and maple icing.
Recipe includes US and metric measurements, categories, cook time, and servings. Recipe document also includes notes on substitutions, flavour adjustments, and taste/texture notes.
