A variation on the classic butternut soup that requires minimal stove top cooking. Roasting the vegetables adds depth and dimension to the flavour, bringing out the natural sweetness and rich flavours when they are pureed in a blender and lightened with non-dairy milk. The addition of tomatoes brings acidity in, balancing the heaviness of butternut. Excellent for meal prepping as the flavours get even better as it rests. A perfect warming soup for fall and winter.
